Baby Potatoes & Green Bean Salad

This recipe has been a HIT with us! Deliciously seasoned, fresh, healthy ingredients, and just in time for green bean season.

Ingredients

baby potatoes: 500g

green beans: 250, trimmed and cut in halves 

mixed salad leaves: large handful

red onion: 1/2, finely sliced

For the Dressing

basil leaves: handful

parsley: handful

extra virgin olive oil: 100ml

apple cider vinegar: 2 tbsp

garlic: 1 clove

salt & pepper: to taste

Instructions

  1. Blanch the basil into some boiling water for 30 seconds, remove, squeeze the water out and add it to a blender with the rest of the dressing ingredients. Blend until smooth.

  2. Steam the potatoes until soft. About 5 minutes before they are done add in the green beans. Drain and let the potatoes and green beans cool for few minutes. Stir in the dressing and serve with the sliced red onion and rocket leaves. Season with salt and pepper.
