5 Minute Pea & Arugula Pesto Pasta Salad

Ingredients

rotini: 1 (8.5 oz) package ready pasta

arugula leaves: 2 cups

peas: (fresh or frozen, thawed) 1 cup

For the pesto:

arugula leaves: 1 cup packed

peas: 1 cup, fresh or frozen (thawed)

mint leaves: 1 tbsp

garlic: 2 cloves

pine nuts: 2 tbsp

parmesan cheese: 2 tbsp, freshly grated

lemon juice: 1 & 1/2 tbsp

sea salt: 1/2 tsp

black pepper: 1/4 tsp

olive oil: 3 tbsp

Instructions

  1. Tear the top of the Barilla Ready Pasta pouch and place it in the microwave for 60 seconds.

  2. In the bowl of your food processor, add arugula, peas, mint leaves, garlic, pine nuts, Parmesan cheese, lemon juice and salt/pepper and pulse until finely chopped. Then with the motor still running, add olive oil in a slow stream until emulsified and creamy. (If you like your pesto thinner, add a little water)

  3. In a large bowl, toss together warm pasta with pesto, arugula and peas. Season with cracked pepper and a little Parmesan, serve and enjoy!
